This meal is a gluten-free adaptation of this Cooking Light recipe: Mini Meat Loaves. All it takes is substituting gluten-free bread crumbs for the regular ones. The recipe is already dairy-free. I like using 85/15 ground beef for this recipe and serving with roasted root vegetables and salad as seen here. We enjoyed this in front of the outside fireplace on a cool night. Definitely stick-to-your-ribs cold weather food, great with a glass of your favorite red wine.
