It’s not much to look at in my photo here, but boy was this delicious. Fresh tomato sauce with a squeeze of lemon juice makes this recipe shine. My only changes were to use goat cheese instead of mozzarella to accommodate my inability to consume cow products, and to add some strips of fresh basil when the pizza comes out of the oven. Also tried a version with pepperoni: good stuff. This recipe is going to be a favorite for me for a long time to come. It’s so fast and easy, and tomatoes are a desert island food for me, so there’s that. Enjoy!
