Love this Cauliflower Fried Rice recipe from Tip Hero (great video, too). We made it our own using 8 eggs for extra protein and gluten-free soy sauce (such as Tamari). Left out the carrots and scallions because we didn’t have any on hand. Next time I will use them and take a more colorful photo… All in all, a nice gluten-free, dairy-free option. The extra eggs make it very filling. And the cauliflower flavor is not overwhelming, especially with the sesame oil, soy sauce and onion flavors. Our three year old devoured it. Here’s a pic of the eggs and other ingredients before they come together… the only photo I took while cooking. Pro tip to make this fast (but not necessarily cheaper): use the bagged riced cauliflower they now sell in grocery stores rather than chopping and then using the food processor to rice the cauliflower.
